The Soy Protein Isolation Process

To achieve a protein concentration of 90% or higher, we use a multi-stage physical extraction and precipitation process. This approach helps preserve the native functional structure of the soybean globulins (7S and 11S fractions).

1. Low-Temperature Extraction: De-hulled, defatted non-GMO soy flakes are extracted at a neutral to slightly alkaline pH, solubilizing the protein fractions while leaving the insoluble dietary fiber intact.

2. Acidic Isoelectric Precipitation: The soluble soy protein extract is separated from the fiber and adjusted to an acidic pH (approx. 4.5), which is the isoelectric point of soy globulins. This step causes the protein to precipitate as curds.

3. Neutralization & Thermal Processing: The curds are washed and neutralized with food-grade alkali to restore solubility. The protein slurry then undergoes high-temperature pasteurization to control microbiological metrics while preserving functional qualities.
