During the cold formulation process (0°C to 4°C), the protein remains highly dispersed, exhibiting Newtonian-like flow behavior. Once injected into myofibrillar muscle matrices, thermal processing (cooking/pasteurization) initiates gelation. Emulsion-type proteins (such as our 9007B-C/9500 series) are formulated to build immediate viscosity and bind oil and water at room temperature, making them ideal for ground meat, sausage batters, and frankfurters.
