Isolated Soy Protein (ISP) is not merely a high-protein ingredient; it is a complex biopolymer system engineered to stabilize multi-phase colloidal mixtures. In meat formulation, bakery systems, and vegetarian meat analogs, the stability of the food matrix relies entirely on the structural integrity of the protein matrix during processing.

When utilizing ISP for emulsion systems (often referred to as an "emulsion gel" with a ratio of 1:5:5 of Protein:Water:Oil), the polypeptide chains undergo dynamic changes. Under high-shear force chopping, the protein globule unfolds, exposing its hydrophobic amino acid residues to the fat phase, while the hydrophilic regions remain oriented toward the aqueous phase.

Our flagship emulsion types, including 9001BW and 9007B-C, are specifically designed to have a high surface activity, lowering the interfacial tension at the oil-water boundary and forming a robust visco-elastic film around oil droplets. This film resists thermal denaturation during cooking, retarding oil separation (syneresis) and maintaining the firm texture of processed meats.

The core difference lies in the molecular conformation and solubility index.
