Lean Meat Phasing

The "red" lean phase utilizes Isolated Soy Protein (such as 9001BW or 9005B), blended with Vital Wheat Gluten Powder and natural colorants. This mixture is hydrated at a 1:3 ratio, subjected to high-shear mixing, and cross-linked. The resulting matrix creates a tough, fibrous network with high tensile strength that holds its shape under hot slicing conditions.
