Emulsion Isolated Soy Protein (ISP) is a highly functional macromolecule isolated from food-grade, defatted Non-GMO soybean meal. Structurally comprised of over 90% protein, its performance is dictated by the balance of two major globulins: glycinin (11S) and beta-conglycinin (7S). The 11S fraction, possessing multiple disulfide bonds, forms a rigid and heat-irreversible gel network. The 7S fraction, highly glycosylated, excels in molecular flexibility, allowing it to migrate rapidly to the oil-water interface to reduce interfacial tension.
