1. The Biochemistry of Emulsion Isolated Soy Protein

Emulsion Isolated Soy Protein (ISP) is a highly functional macromolecule isolated from food-grade, defatted Non-GMO soybean meal. Structurally comprised of over 90% protein, its performance is dictated by the balance of two major globulins: glycinin (11S) and beta-conglycinin (7S). The 11S fraction, possessing multiple disulfide bonds, forms a rigid and heat-irreversible gel network. The 7S fraction, highly glycosylated, excels in molecular flexibility, allowing it to migrate rapidly to the oil-water interface to reduce interfacial tension.

Our emulsion-type Isolated Soy Proteins (such as models 9500, 9007B-A, and 9007B-C) are engineered to maximize these parameters. During processing, controlled enzymatic and thermal modifications expose the hydrophobic regions of the protein core. When sheared with water and lipids, these exposed hydrophobic sites bind oil droplets, while the hydrophilic regions project into the aqueous phase. This creates an extremely stable, viscoelastic emulsion matrix that survives thermal sterilization, mechanical cutting, and freeze-thaw cycles.
